Chicken or Roasted Sweet Potato Tinga

Shout out to my amiga Luz. This is her recipe. Super savory, tangy, juicy with a touch of smoky spicy, deliciousness. This creation is made with either roasted chicken or roasted sweet potato cubes simmered in an authentic sauce of chipotle peppers, tomato, onions and garlic. A few secret spices and a bit of cabbage for added crunch perfect this dish.

Vegetarian Option
For the vegetarian folks, this can be ordered with succulent, seasoned sweet potato cubes. We make sure to cook the vegetarian Tinga separately and switch out chicken broth with veggie broth. You can also specify the vegan option and ask us to hold the cheese.

Storage
I am a stickler for food safety. Years spent in the restaurant industry beat the practices into me. Drives my hubby nuts. So I give you the same advice I practice at home, three days and out. Alternatively the Tinga freezes well for use within three months.

Meal Deal
We can provide the sides! A ready to heat and eat plate is available and includes, black beans, Roasted Corn and Pepper Hash, and Chipotle Salsa and is finished with Fresh Cheeses, a side of cilantro, and a few limes. Oh and can’t forget the pickled red onion. A nice contrast to the richness of this dish.

Serving Suggestions

Taco Bar : Slice up some cabbage, a bit of cilantro, maybe some radish. Don’t forget lime. Get you some of those beauty fresh corn tortillas available literally EVERYWHERE – and chow!
Tostada : Want something crispy? Take a tostada shell, layer in the Tinga, add your lettuce, tomatoes, cremas, salsas and cheese, mmmmm.
Burrito : Pack up a flour tortilla with all your favorites, roll it up and heat it. Couple it with our Black Beans a bit of rice, don’t forget the salsa!
